An amuse bouche is typically a small, bite-sized appetizer, served on the house to set the stage for a meal to come. Usually an indulgent one. In a new trend, restaurants are opting for a light, complimentary cocktail to start a meal instead. I call the concept an “amuse booze” 🍸

Ocean Prime

Ocean Prime recently launched a Jazz & Bubbles Brunch on Sundays, from 11 a.m. to 3 p.m. Before munching on monkey bread and crab cakes benedict, guests at the Strip restaurant sip on a martini made of gin, espresso, and a hint of orange.

Fine Company

Fine Company in Downtown Summerlin offers guests on the patio a fun, refreshing combination of Aperol, shio koji, lime leaf, cucumber, green apple, and sparkling wine when visiting during Golden Hour, 6-8 p.m., Monday-Friday. It’s a great time to order banana bread, pasta, seafood, and other globally inspired cuisine by Chef Roy Ellamar.

William B’s Steakhouse

The newest restaurant at the Suncoast is winning over locals with a Strip-worthy steakhouse experience at neighborhood prices. Even better — dinner at William B’s begins with a free cocktail that changes by the week. It’s usually a vodka-based martini with mango, prickly pear, blueberry, and cranberry used as mixers so far.
