You could make your own pie dough, roast your own pumpkin, or par-cook your own apples; you could roll out crusts and latticework and crimp and pray that your crust doesn’t have the dreaded soggy bottom. But why? Thanks to all the culinary talent in town, you can order your Thanksgiving pies from pastry specialists with pickup locations all over the valley.

Boom Bang, helmed by “Top Chef” alum Elia Aboumrad, has Thanksgiving dessert offerings that are sure to start a conversation: The pumpkin pie ($35) eschews the traditional butter crust for a Graham cracker base, and comes topped with cardamom whipped cream and toasted pumpkin seeds. Preorder at least 48 hours in advance via email or by calling 702-478-6200. (📍 Henderson)

If you’re feeling extra spendy, preorder an “extra silky” pumpkin pie, a bourbon pecan pie, or a salted caramel apple pie for $70 each. Dominique Ansel is, of course, creator of the famous cronut, so you might as well get a few of those ($22 for two). Pickup Nov. 21-27. (📍 Caesars Palace)

Founded in 1959, Freed’s is a Vegas institution, with five locations around town, and its classic pumpkin pie ($24) is a sure hit. There’s also a whiskey chocolate version of the pecan pie for $35, a pumpkin cheesecake for $60, and two apple pie options. Pickup preorders are open through Thanksgiving Eve and they deliver to most of the valley. (📍 Various locations)

Michael Gillet, a two-starred Michelin French pastry chef, opened his own storefront in the Southwest in 2019. This Thanksgiving, mix and match 9-inch pumpkin, apple, or pecan pies ($36 each). Preorder by Nov. 21 for pickup on Nov. 26. (📍 Rainbow & Sunset)

Media personality Jeremy Hamock is known for his sweet potato pies ($16), which are typically lighter and less dense than pumpkin. But if pie crust isn’t your thing, you can opt for sweet potato cheesecake ($30) or sweet potato pie cookies ($8). Order between now and Nov. 21 for pickup on Nov. 25 inside Darla’s Southern Cajun Bistro. (📍 MLK & Washington)

Who says your Thanksgiving pie has to be pumpkin? Paina Cafe sells ube custard ($25) and chocolate haupia pies ($28) for a tropical, Pacific Islands twist. Preorders are available now with pickup Nov. 24 and 27 (📍 Chinatown, Enterprise)

Pastry chef Andrea McLean, a CSN grad and Bouchon alum, started Pop n Pies during the pandemic and it continues to be a hit. Order pumpkin, salt and maple, blueberry crumble, and other autumnal pies ($30+) at least two days in advance for pickup Nov. 25-26 — you will receive the pickup location after submitting an order. (📍 McLeod & Sunset)
